Florida Fusion - A Modern Look at Florida's First Foods

Description: Where could you go to be served wild turkey and foraged green soup, prickly pear and creeping fig salad, or pit-roasted pork on a bed of polenta washed down by an aguardiente and peach cocktail? Though they may sound like fresh, modern food trends offered in a market-to-table restaurant, these dishes could all have been served in early Colonial Florida.

By using ingredients brought to Florida not by airplane but by galleon or else gathered by the indigenous population, Annie Francis creates modern recipes with an authentic, historical foundation. Join us at the Tampa Bay History Center as Francis presents these intriguing recipes. Participants will enjoy recipe tastings and wine pairings as they hear historical anecdotes on food in early Colonial Florida.

Annie Francis received a BA in the History and Criticism of Art from Florida State University and a Masters Degree from lʼIstituto per lʼArte e il Restauro a Palazzo Spinelli in Florence, Italy. For the past several years, she has conducted research in archives, libraries, and kitchens in Spain, Washington, D.C. and Florida.
